~ Tomato Pie ~

Ingredients:
For the Crust:
1 ¼ cups flour½ cup shortening3-4 tablespoons cold milkDashes of dried oreganoDashes of black pepperDashes of garlic powder¼ tsp. salt
In a large bowl combine the flour and all of theseasonings.  Cut in the shortening untilit is crumbly.  Add the milk a little ata time and while forming the dough into a ball.
On a floured surface, roll the dough out to fit a 9 ½ inchpie plate.
Preheat Oven 350 degrees:
Bake the crust for 10-12 minutes before filling.
For the Filling:
2 large tomatoes - sliced4 cloves garlic – choppedHealthy handful of parsley – chopped1 red onion - sliced thin8 oz. mozzarella cheese - shreddedGrated Romano cheeseOlive oil for drizzlingDashes of dried oregano Dashes of garlic powderDashes of black pepper
Layer the pie starting with the tomato, then onion, garlicand parsley and grated Romano cheese and mozzarella.  Repeat this process finishing with the gratedRomano and mozzarella cheeses.
Top off with the seasonings and a drizzle of olive oil.
Bake at 350 degrees for 25-30 minutes.
This is a very delicious side dish or main course with anice side salad and a delicious loaf of bread.
