Ingredients:
4 - Split chicken breasts with bone
For the Marinade:
1 tsp. sugar1 tsp. garlic powder1 tablespoon vinegarJuice of 2 lemons1 tsp. salt½ tsp. chili powder
Place all of the above ingredients in a bowl and place thechicken breasts to marinade. Cover thebowl and place in the refrigerator for at least one hour or up to overnight.
For the Coating:
3 cups Corn Flakes½ cup corn meal2 eggs – beaten with a splash of water1 cup flour½ tsp. salt½ tsp. garlic powder½ tsp. black pepper½ tsp. chili powder½ tsp. garlic powderOlive oil for drizzling
Place the corn flakes in a food processor and process untilsmooth. Place in a bowl and add thecornmeal to the processed cornflakes. Add the seasonings.
Set up three shallow bowls, one with the flour, one with theegg wash and one with the corn flake crumbs.
Dip the chicken first in the flour, then the egg wash andfinally in the corn flake crumbs.
Place in a baking pan and drizzle olive oil over the pieces.
Preheat Oven 350 degrees:
Bake 40 – 45 minutes, or until juices run clear, dependingon the size of the chicken breasts.
These are a wonderful alternative to fried and are juicy andtender.
