Ingredients:
12 carrots – diced1 large onion – diced4 cloves of garlic – chopped3 stalks celery – chopped1 green chili pepper– chopped1 clove bay leaf28 oz. can crushed tomatoes1 cup frozen peas 19 oz. can red beans – or your choice7 cups chicken broth1 tsp. salt½ tsp. black pepper1 tsp. dried oregano1 tsp. chili powder1 tsp. paprika1 tsp. garlic powder1 tsp. sugar
Olive oil for drizzling
Place the carrots, onions, garlic, celery and green chilipepper in a soup pot with a drizzle of olive oil. Sauté until the onion softens and starts tobecome transparent.
Add the crushed tomatoes and bay leaf to the pot. Add the chicken broth. Add the seasonings, peas and beans and gently simmer onlow for at least one hour or more.
Serve with your favorite noodles or rice.
This is a hearty and warming dish.
