5 - Boneless porkchops (about 1 inch thickness)Dashes of saltDashes of black pepperDrizzle of olive oil
For the Sauce:
28 oz. can crushed tomatoes5 cloves garlic1 large onion – sliced2 cups frozen peasDashes of saltDashes of black pepperDashes of ground oreganoDashes of garlic powderPinch of sugarDashes of chili powderHealthy handful of fresh basil – chopped2 stalks celery – chopped1 ½ cups fresh bread crumbsGrated Romano or Parmesan cheeseOlive oil for drizzling
Preheat Oven 350 degrees:
Drizzle a little olive oil in a baking pan. Place the pork chops in the pan and seasonwith salt and pepper and another drizzle of olive oil.
Top with the sliced onions, chopped garlic, fresh basil,celery and the crushed tomatoes. Add theseasonings and peas and top with the fresh bread crumbs.
Drizzle a little olive oil over this and top and finish withthe grated cheese.
Place in the oven for 50-55 minutes, depending on thethickness of the pork chops you are using.
This is a hearty meal and may be served with rice ornoodles.
