~ Yellow Squash with Fragrant Rice ~

Ingredients:
2 yellow squash – skinned and sliced5 cloves of garlic – chopped1 red onion – slicedDashes of red pepper flakesDashes of saltOlive oilGrated Romano
Heat a large frying pan with a drizzle of olive oil.  Add the sliced onion and garlic and slicedsquash, season with salt, pepper and red pepper flakes.  Gently, sauté until the squash is slightlygolden.
For the Rice:
2 cups uncooked rice1 tsp. brown sugar½ tsp. curry powderDash of turmeric
Cook the rice as directed adding the spices to the water used for cookingthe rice.
Plate the rice and top with the sautéed squash, drizzleolive oil, dash of red pepper flakes and grated Romano cheese.
This is a very easy and nice side dish.
