~ Chicken Strips with Spicy Sauce ~

Ingredients:
2 lbs. boneless chicken breast – cut into strips2 cups Corn Flakes – crushed1 cup flour1 cup cornmealVegetable oil for frying
Marinade:
1 cup of sour milk or buttermilk – (to make sour milk – 1cup of milk plus 1 tablespoon of white vinegar or lemon juice)½ tsp. ground cumin½ tsp. salt½ tsp. black pepper½ tsp. garlic powder½ tsp. cinnamon¼ tsp. nutmeg½ tsp. garlic powder
Place chicken strips in marinade and place in refrigeratorfor one hour or up to overnight.
Measure 2 cups of Corn Flakes and place in a food processorand process until crushed.
Combine the Corn Flakes with the cornmeal and flour in ashallow bowl.
Coat the chicken strips in the Corn Flake mixture.
Heat a large frying pan with about one inch of vegetableoil.  Carefully, place the preparedchicken strips in the hot oil.  Turn whengolden on one side.
Place in a platter prepared with paper towels.
For the Spicy Sauce:
28 oz. can of crushed tomatoes1 onion – sliced1 jalapeño – chopped with seeds5 cloves of garlic – choppedHealthy handful of fresh basil- chopped1 tsp. of brown sugar1 tbs. of vinegar½ tsp. of garlic powder½ tsp. of chili powder½ tsp. of ground cumin½ tsp. of salt¼ tsp. of black pepper
In the same pan that the chicken strips were prepared inplace the garlic, jalapeño and onions and sauté until the onions are slightlytransparent.
Add the crushed tomatoes, spices and vinegar.  Add the spices and basil and simmer on lowfor about 10 – 15 minutes.
Serve with the chicken strip and enjoy!
