Ingredients:
3 lbs. boneless chicken breast Healthy handful of cilantro – chopped4 oz. Monterey Jack cheese – shreddedDashes of ground cuminDashes of garlic powder1 tsp. of brown sugar½ tsp. salt¼ tsp. black pepperZest and juice of 1 lime1 lb. baconYour favorite bread for the burgerSliced avocado – for the burger
Prepare the bacon and set aside. Reserve some of the baconfat to cook the burgers in.
Cube the chicken breast and place in a food processor and givea few good chops. Do not over processthe meat.
Add the cilantro, shredded cheese, lime zest and lime juice.Add all of the seasonings and mix well.
Form into the desired size burgers.
Heat a large frying pan with the drippings from the baconand a little drizzle of olive oil.
Carefully, place the burgers in the hot frying pan and let the burgers get anice golden color on one side before flipping.
Sautéed Onions:
1 large Spanish onion - sliced1 jalapeño – chopped with seeds1 tablespoon of vinegar1 tsp. brown sugar1 tablespoon ketchupDrizzle of olive oil
Heat a griddle or large frying pan or griddle with a drizzleof olive oil.
Place the sliced onions and jalapeño in the pan tosauté. Allow the onions to get abeautiful golden color.
Place the onions and jalapeño in a small servingplatter.
Mix together the vinegar, brown sugar and ketchup in a smallbowl. Add to the onions and jalapeño andtoss.
Build your Burger:
Toast the bun and top with the burger, bacon, avocado andonions. Try a little mayonnaise on yourburger; it is a nice change from ketchup.
These burgers are a nice change of pace for burger night!
