Ingredients:
½ head of cabbage – sliced thin3 bunches of scallions – sliced2 carrots - grated4 cloves of garlic – chopped1 bunch of Italian parsley – chopped4 stalks of celery – chopped½ jalapeño – chopped1 inch piece of fresh ginger – gratedDrizzle of sesame oilDrizzle of olive oil1 lb. of your favorite noodles
Sauce:
1 teaspoon of Hoisin Sauce ¾ tsp. Ground Fresh Chili Paste2 teaspoons Apricot preserves2 tablespoons Teriyaki Sauce2 teaspoons Soy Sauce1 tablespoon Fish Sauce1 teaspoon Sesame Oil1 teaspoon Fish Sauce1 teaspoon Lime Juice
Heat a large frying pan with a drizzle of olive oil and adrizzle of sesame oil. Add thevegetables to cook down slightly. Do notovercook your vegetables.
Prepare the noodles as directed and drain. Place in a serving bowl and top with thesautéed vegetables.
Combine all of the ingredients for the sauce in a small bowland toss in the noodles and vegetables.
This is a healthy and fun meal.
