~ Mac and Cheese – Italian Style ~

Ingredients:
1 lb. of your favorite macaroni
For the Food Processor:
Healthy handful of fresh basilHealthy handful of fresh parsley4 cloves of garlic 1 tablespoon of sun dried tomatoes2 vine ripe tomatoes16 oz. of cottage cheese
Cheese Sauce:
½ cup of grated Parmesan8 oz. of Monterey Jack – grated1 cup of milk
Topping:
1 cup of Italian style croutons – processed
Preheat Oven 350 degrees:
Prepare the macaroni as directed and set aside.
Prepare a baking dish with a drizzle of olive oil orbuttered.
Combine all of the ingredients for the food processor andgive a few good chops.
Place in the baking dish and add the milk, Parmesan cheeseand grated Monterey Jack cheese and stir. Add the macaroni and toss.
Top with the croutons and place in the oven for 25 – 30minutes.
This is a nice side dish.
